Pasta Tricolore

Ripe, luscious tomatoes and huge bell peppers unite in this wonderfully simple summer pasta dish. Red peppers, white onions and green basil represent the colors of the Italian flag. How could you not love this pasta tricolore dish? 

Ingredients (serves four):

  2 Red or yellow bell peppers

  1 Onion

  4 Very ripe tomatoes

  1 Tbsp. Capers

  Fresh basil, generous bunch

  1 tin Tuna, packed in olive oil

  Black olives

  Extra virgin olive oil, q. b

  Salt, q.b.

  1 lb. Pasta, Rigatoni or Penne

Directions: Wash fresh basil and chop. Dice onion and chop peppers. Dice tomatoes. Cover bottom of saucepan with olive oil, heat and sautee onion until golden. Add peppers and simmer on medium heat a few minutes until tender. Add diced tomatoes and simmer, raising heat a bit so that the water from the tomatoes begins to evaporate. Add basil, olives, capers, and tuna (including oil). Simmer sauce while boiling the pasta. Drain pasta, saving some of the brodo della pasta (pasta water) to add to sauce to make creamier if needed.
