1 pre made pie crust
1 Tablespoon olive oil
1 cup chopped asparagus
1/2 cup chopped scallions
1/2 cup Canadian bacon cubed
pinch of nutmeg, pepper and salt
1/2 cup Miceli's Ricotta Cheese
3/4 cup Miceli's Shredded Mexican Cheese
Pre heat oven to 400Â° F
In a medium skillet sauté olive oil with asparagus and scallions until tender, mix in canadian bacon and set aside.
In a medium mixing bowl blend eggs and seasonings until fluffy, add Ricotta and blend until fluffy again.
Add shredded Mexican cheese to asparagus mixture and place in the pie shell. Pour ricotta egg mixture on top.
Bake at 400Â° for 25-30 minutes.
