Miceli's Ricotta Cookies Miceli's Ricotta Cookies

1/4 lb butter, softened
1/4 lb cup ricotta
1 tsp. vanilla
1 cup sugar
1 egg
2 cups sifted Flour
1/2 tsp.  Baking soda
1/2 tsp.  Salt

Preheat oven to 350 degrees.

Blend butter with ricotta until creamy. Add vanilla, mixing well. Add sugar gradually, beating until well blended. Add egg and mix well. Slowly stir in dry ingredients and blend well.

Drop from a teaspoon on greased baking dish.

Bake for 10 minutes.

Yields 30-36 cookies, depending on size.
