La Macedonia (fruit cup) is usually enjoyed in the summertime when peaches and other summer fruits are in abundance. But, we were recently inspired to create a winter macedonia when we were gifted a Christmas-red wicker basket full of persimmons. The Italian persimmon is a rounded, orange-colored sweet fruit that decorates many family tables in Italy during autumn.
Ingredients:
Any seasonal fruit will work in place of these options. Choose your favorites!
- 2 Lemons
- Oranges
- Apples
- Kiwi
- Bananas
- Other seasonal fruits
- Ripe Persimmons (1 per macedonia)
Directions:
Squeeze the juice of two lemons into a bowl and add diced oranges, apples and kiwi. Add bananas in last to avoid the darkening of the fruit. Carve out the center of each ripe persimmon, adding the persimmon pulp to the fruit mixture. Fill each persimmon with the fruit mixture. Buon appetito! Buon appetito!
