1 lb. veal cutlets (cut Italian style 4-5 slices cut 1/4 inch)
1 or 2 eggs, beaten
1/4 cup flour
1/3 cup olive oil
Tomato sauce
Miceli's Grated Parmesan Cheese
Miceli's Mozzarella, sliced
Freshly ground pepper
Olive oil
Salt and pepper to taste

Mix beaten eggs with 1 teaspoon of grated cheese, salt and pepper. Dip cutlets in the following order: flour, egg mixture, breadcrumbs.

Heat oil in frying pan, fry cutlets slowly on both sides until well browned. Place cutlets in casserole or in individual baking dishes, pour tomato sauce over each, sprinkle with grated cheese and arrange slices of mozzarella on top of each cutlet. Sprinkle a little pepper over the mozzarella.

Bake about 10 to 15 minutes in moderate oven (375°F) or until mozzarella is melted. Serve hot.
