In the Cucina with La Gazzetta: Grandma Savoca's Applesauce Cake

This is a delicious chocolate cake with an unusual homemade frosting that makes the cake even more chocolatey. As with many recipes handed down from my Sicilian grandma, some of the amounts are estimates, particularly in the frosting of this recipe. Buon appetito!

Ingredients:

2 Eggs

¾ C. Applesauce

1 C. Sugar

¾ Stick of Margarine

1 C. Flour

3 T. Cocoa

1 tsp. Baking soda

½ tsp. Cinnamon 

1 tsp. Vanilla 

Confectioner’s sugar

1 tsp. coffee

1 T. butter

Directions:

Preheat oven to 350 degrees. In a bowl, mix together eggs, applesauce and sugar. Add the margarine and mix. Add flour, cocoa (to measure cocoa, use heaping spoonfulls from an actual table spoon), baking soda, cinnamon and vanilla. Mix well until combined. Save ¼ C. of batter to add to frosting mix. Pour remaining batter into an 8x8 greased and floured pan. Bake for approximately 35 minutes. Let cool completely.

Directions for frosting:

Dissolve 1 tsp. coffee in 2 tsp. water. In a bowl, mix saved ¼ C. of batter with confectioner’s sugar, ½ - 1 tsp. vanilla, 1 tsp. coffee, and 1 T. butter until desired frosting consistency. 

After cake cools, frost cake and enjoy!
