n June, zucchini are abundant in every Italian summertime garden and will star in risotto, pasta dishes, main courses, antipasti, and side dishes. This delightful zucchini recipe is sure to please.
Ingredients (for 4 people):
- 3 Zucchini
- Extra-virgin olive oil, q. b.
- 2 Garlic cloves
- 1 handful of Capers
- ½ - 1 C. Breadcrumbs
- Salt, pepper, q.b.
- Oregano
Directions: Wash zucchini, discarding pulp and seeds. Cut zucchini into strips a few inches long. Cover stainless steel pan with olive oil and heat diced garlic cloves until golden. Add zucchini strips and cook on medium heat for a few minutes. Add breadcrumbs and capers and continue to simmer until golden. Add salt, pepper and oregano to taste.
