Italian Cheese Bread

Ingredients
3/4 cup water
2 teaspoons yeast
3 cups unbleached all-purpose flour
2 Tablespoons sugar
1 1/2 teaspoons salt
2 Tablespoons salt
2 Tablespoons soft butter
1/2 cup Miceli's Fancy Shredded Cheddar Cheese
1/2 cup Miceli's Traditional Ricotta Cheese
3 Tablespoons Miceli's Fancy Shredded Parmesan Cheese

Preparation
Dissolve the yeast in 1/3 cup of lukewarm water. Add the remaining ingredients and mix and knead by hand, or in your mixer with dough hook.

Turn onto a floured board and knead for 8 to 10 minutes, until smooth and elastic. Place in a greased bowl, cover, and let rise until doubled, about 45 minutes.

Deflate the dough, form into a 9 inch log, and place it in a greased 9"x5" loaf pan. Cover loosely with greased plastic and let rise until the bread comes an inch above the rim of the pan. Bake the risen dough in a preheated 350oF oven for 30 to 35 minutes.

Remove from the oven; let the bread cool in the pan for 10 minutes before tipping out of the pan to cool on a rack before slicing.
