Fried Dough (Frappe)

A four star treat!

Ingredients

  • 2 cups flour
  • 1/4 cup granulated sugar
  • 2 tbsp. unsalted butter, chilled and cut into 1/2” bits
  • 3 eggs
  • 1 tsp. vanilla
  • 3 tbsp. dry Marsala wine or dry white wine
  • Wesson vegetable oil for frying
  • 2 heaping tbsp. confectioners sugar

Method

Place flour, granulated sugar and bits of butter into a food processor bowl with steel blade. Process on/off until the butter is blended in.

With the motor running, add the eggs one at a time. Add the vanilla and the wine. Keep processing until the dough either clings together nicely when pinched or forms a ball at the end of the blade (approx. 2 minutes). Work the dough briefly with your hands, 1 minute or so, and then run it through the pasta-rolling machine to the next narrowest opening. Cut in diamond shapes or 8” long strips and tie them in a loose knot. You can make them into 4”x3” rectangles and cut 2-3 slits in them.

Fry the dough in hot (350 degrees F.) oil until golden and puffed. Drain on paper towels and dust with confectioners sugar.

Serve hot or cold, accompanied by a white or slightly sweet red wine or a bubbly.
