Zuppa Pavese
Pavia Soup


Pavia is a small, old city located south of Milan. This soup is its specialty. It is very important that the broth is clear, and that it is made with very lean meats or chicken.


INGREDIENTS:
3 tbsp. butter
6 slices rustic crusty bread
6 cups meat or chicken broth
6 eggs
fresh ground black pepper
6 tbsp. grated Parmesan cheese
3 tbsp. parsley, chopped

PREPARATION:
Preheat oven to 350°. Melt the butter in a large skillet and fry the bread slices on both sidesuntil they are golden brown. Divide among six soup bowls. Turn oven off and place bowls in it.

Bring broth to boil. Break an egg onto each slice of bread and pour the boiling broth on them. Add pepper to taste. Sprinkle with Parmesan cheese. Garnish with chopped parsley and a pinch of nutmeg. Serve immediately.
